Demerara syrup is a simple syrup made with demerara sugar, a less refined sugar with a deeper, richer flavor than white sugar. It’s the golden child of cocktail syrups, especially when it comes to the Old Fashioned.
Why is it so good in an Old Fashioned?
Using Demerara syrup, you elevate your Old Fashioned from a classic to an exceptional drink. It’s a small change that makes a big difference.
I always use Jack Rudy Cocktail Demerara Syrup because it’s delicious and convenient to have on hand. But, you can always make your own! All you need is 2 cups of Demerara sugar and 1 cup of hot water.
Just combine the Demerara sugar and hot water in a medium saucepan, stir continuously over medium-low heat until the sugar is completely dissolved. Avoid boiling the syrup. Then let the syrup cool completely before transferring it to a clean glass jar or bottle. Store in the refrigerator.
Add 1/2 ounce Demerara syrup to 2 ounces of bourbon or rye and 2 dashes of Angostura bitters for a simple but exceptional Old Fashioned. Garnish with orange peel, and a couple of cherries, and enjoy!

Good stuff. I usually make Demerara 1:1 for use in rum Old Fashioned and Old Cubans, but rum doesn’t needed the added sweetness of the 2:1. Thanks for the tip on the Jack Rudy.
